One of the most important vines and widespread in the world enology, it requires dry soils, better if of alluvial origin. The wine enjoys great reputation; vinified in white, that is in the absence of skins, is presented in an elegant luminous straw-yellow with a characteristic bouquet that recalls the summer countryside, at the time of the hay, with those healthy and strong perfumes that only memory recalls.

SOIL: loose and well drained alluvial soil, deriving from sedimentation of gravel debris over the centuries brought by the floods of the Piave river.

Production technique: White vinification with short cold maceration for 12 hours

ORGANOLEPTIC CHARACTERISTICS: Straw yellow with golden refecletion. Fruity, fine and delicate smell, it acquires hints of dried fruit over time. Dry, velvety and harmonic taste.

Vineyards: 100% Verdiso grape

Vinification: Technological research is aimed at combining operational rationality with the respect of the technical oenological traditions. Phases: - grappling of grapes and slight cold maceration; - pressing with vacuum press in the absence of oxygen and with controlled temperature; - cold static decantation of must for the separation of some pulp and skins residues; - fermentation with indigenous yeasts, with temperature control, a major factor in obtaining a quality product; - separation of solid parts from liquid ones by means of targeted pourings

Look: Straw yellow with greenish reflections

Scent: Green apple scent, with lemon, a light apricot note, scents of fig leaves and spices

Taste: Sapid with delicate fruity aroma and sharp freshness that cleans the palate

Verdiso is a wine obtained from the homonymous native grape variety. It is cultivated on the hills of Refrontolo and in the pedemontana zone. Historically more popular now reserves niches of production in a few companies, which preserve it with pride.

Vinification: Technological research is aimed at combining operational rationality with respect to traditional oenological techniques Phases: - pressing of whole grapes with vacuum press of modern conception, in the absence of oxygen and controlled temperature to better preserve the fragrances present in the grape; - cold static decantation of must for the separation of some pulp and peat residues; - controlled temperature fermentation, a major factor in obtaining a quality product; - refinement of the base wine on the noble lump and delicates aimed at separating the solid parts

17/18 % Vol. - 500 ml

From the ancient and honoured tradition of Tuscan hospitality comes this fabulous wine: Vin Santo (“Holy Wine”). The must obtained from dried Malvasia grapes is fermented and matured for years in oak and chestnut barrels (“caratelli”) in the spectacular Vinsantaia (the Vinsanto winery) in the Main Tower (“Torre Grande”) of the Castle.

Passerillage raisining of the grapes on “tenditoi” (drying plateaux) in the Castle from September up to December.

Fermentation and maturing in “caratelli” (typical small oak and chestnut barrels) continues for 3 to 4 years, until the almost complete transformation of the residual sugar.

Tasting Notes its dry structure, traditional of the old times classic Vinsanto, balanced by a natural delicate sweetness makes it a fine dessert wine
